We’re Hector’s Tacos!
and we’re bringing tex-mex comfort food to Olympia, wa.
Inspired by the cuisine we grew up on in our homes and favorite restaurants across Texas, Hector’s is built on high vibes and no-fuss authentic Tex-Mex flavors. Our menu is simple using family and classic Tex-Mex recipes. And we do things a little differently here in SW Washington.
Our presentation is quick-service and casual—from the walk-up order windows (online ordering coming soon!), to the tacos individually wrapped and nothing formally plated. Our service is quick and friendly, and our food is designed to be as much for dine-in in one of our indoor-outdoor spaces, as taken to-go before work, to a meeting, or an event with family and friends. Our team brings the energy, our space brings the vibes, and our food brings the love.
It all started with a
man named hector.
Hector Rodriguez (“Generalissimo”) was born in San Antonio, TX. A giant of a man at 6’8”, he played basketball at West Texas University before competing in the 1976 Olympics with the Mexican National Basketball Team.

Fast forward a generation and not much changed—also born and raised in San Antonio, his son and founding restaurant partner, Aaron Rodriguez, is basketball- and Tex-Mex obsessed. Since leaving Texas in 2003, he’s missed the classic foods he was raised on.
Aaron’s wife Lauren grew up in Dallas and remembers Tex-Mex often with a metropolitan twist. But there was also no escaping the classics—like queso and salsa at favorite spots and made at home for Cowboys games and bridge events her parents hosted. Her favorite frozen margarita inspires Hector’s sangria margarita today.
Lauren and Aaron met in 2003 working at El Arroyo—an iconic Austin Tex-Mex joint now known nationwide for its witty marquee. They share a passion for great food and next-level service and ambiance. Together with their partner Kurt, a native of Gray’s Harbor, WA who built Hector’s location on 4th Avenue with his own two hands, they are thrilled to bring some of their Tex-Mex favorites to the PNW.

We are driven by the guest experience. Our guests will know they are our WHY. We aim to get it all right for them, but if we don’t, we make up for it. Our space is casual and there is no table service, but our cashiers are lovely and happy to interact with you, and our hangout spaces are a vibe!

Our food is simple, but we insist on high-quality ingredients like avocado and olive oil, butter, cage-free eggs and more. Our recipes are from our family to yours. Everything is scratch-made with love.
